This dish included smoked trout and smoked salmon along with 2 dipping sauces. We raved about the floral finish on the salmon. Upon inquiring, we were told that the chef stumbled upon this flavor by experimenting with different woods and lengths of time smoking the meat. The salmon was great paired with the Harvest Grain Mustard Cream. The trout was light, flaky and fabulous. It was smoked so well that it needed none of the sauces offered. This was an excellent dish.
