Alchemy Rosemary Risotto

Well.....the rosemary flavor was wonderful.  However the texture of the risotto was horrible and leads you to believe that they don't know how to prepare risotto.  Risotto should have a tender texture with a slight bite.  Each grain of rice should be separate and encased in sauce.  It should not be a big pile of mush.  This was more like eating dry mashed potatoes than risotto.
