Sascha's Coconut Cake

Coconut cake is tricky.  It's either great or terrible.  In this case it was GREAT, or as we like to say yummyness personified!  The cake was a bit dense however it worked for this dish.  We loved the passion fruit curd that was nestled between each layer of the cake along with a cream cheese frosting.  The frosting was heavy but had to be to compliment the denseness of the cake.  Amazingly it was not to sweet.
